Homemade baked beans today and they were so tasty we were noses down, troughing away before I remembered the photo. Anyway they look sort of like regular baked beans only more tomato-ey and with added onions / red peppers. And way more healthy than the shop bought version. They take just a few mins and if you're in a rush miss out the onions / peppers to speed up even more. I vary this every time but today's recipe was: Sauté in water 2 finely chopped red onions & a red pepper Add a crushed garlic clove Approx a tablespoon of tomato purée, 1/2-1 teaspoon each of smoked paprika & cumin, 1/4 teaspoon white pepper & a shake of seaweed for natural saltiness Sauté a min or so more to cook the spices, then add 1/2 bottle of passata & a splash of balsamic vinegar At this point I tried the sauce and mine was a little acidic so I added a small squirt of date syrup Add 2 cans of drained cannellini beans and warm through We had them with toasted Rye sourdough bread, broccoli & green beans & Nutritional Yeast sprinkled on top.
