Chop up 4 red onions, 2 celery sticks, 3 cloves garlic, 6 red potatoes (don't peel as the peel is v nutritious, just wash & cut off any sprouty bits). Sauté the onions, garlic in water*. Add celery & potatoes for a few mins then add water to just cover & 1 teaspoon low-salt boullion. Add whatever herbs you fancy or have handy. Mine were a pinch of Tarragon & Thyme & a teaspoon of Dill & some sea vegetables. Leave to boil until potatoes are almost done. Then add roughly chopped broccoli - as much as you fancy, I had 2 medium bunches. Lid on so it can steam until tender. Whizz it up in blender with a teaspoon of mustard powder, a few tablespoons of Nutritional Yeast, pepper. Adjust to taste. I also added a splash of apple cider vinegar. Serve over drained canned Butter Beans (we had 2 cans between 3 of us) & sprinkle with Nutritional Yeast. If you don't want gloopy soup then only do minimal blending or use a hand blender. My kids seemed to like the gloop - weirdos! Not a single one of these ingredients is essential except for the Broccoli so sub in whatever you have. * How to sauté in water. Heat pan up hot, add in onions and keep stirring. They will start to brown / stick a little. When that happens add a tiny splash of water and stir, scraping any brown / stuck from the base of pan. Continue to add splashes of water as needed. The water is just to loosen it, not to boil the onions. There's probably a much better description online!
