Chop up a large bunch of leeks (including green parts unless they look discoloured or too tatty), 4 carrots, 3 celery sticks, 3-4 red onions, couple of garlic cloves, approx 5 red potatoes with skins on (as that's got the most good stuff in). Add 1 teaspoon of low salt boullion, 1-2 cups of water, 2 teaspoons of dill, 1 teaspoon of tarragon, a shake of seaweed, 1 teaspoon of celery seeds, 1 tablespoon of onion granules, 1/2 teaspoon white pepper. (None of which is compulsory, just happens to be what I chucked in today!). You could sauté the onion / leeks / celery first in water but I can never be bothered so I just chucked it all in my electric pressure cooker (4 mins manual & approx 10 mins natural release). Saucepan would also be fine. Once cooked do the additions mentioned about and pour over butter beans & barley.
