How to turn leftovers into a speedy & nutritious dinner. I had a small amount of Leek & Potato soup left (one of my kids' fave soups - reposted the recipe a week or so ago) so decided to use the soup as a sauce. I steamed a pack each of Tenderstem Broccoli & Asparagus, drained 2 cans of beans, microwaved 2 packs of brown rice (they have a tiny bit of oil in but ok if you're in a rush). Served 3 of us. This was it in separate piles but we mixed it in and it was a bit like risotto. You could do the same with any leftover soup, bean chilli, curry etc - just add beans, Veg & a wholegrain for a new complete meal.
