Roughly chop a few carrots, 2 onions (or 1 big one), a stick of celery, 3 cloves of garlic, a red pepper. Bung them in the microwave (covered) for approx 5 mins on high until soft. Chuck it in your blender with approx a bottle of Passata (no salt). Add seasonings to taste - I think I added: 1/2 teaspoon of cinnamon, 1-2 heaped teaspoon of dried oregano (depending how herby you like it), pinch of white pepper, half a teaspoon of low salt boullion, 2 heaped teaspoons of onion powder, half a teaspoon of chipotle flakes for smokiness, heaped teaspoon of seaweed. Also a splash of thick balsamic vinegar & approx 1/2-1 teaspoon of date syrup (due to the acidity of the passata). Whizz it up and taste and adjust as needed. If you have a Vitamix or equivalent keep whizzing for a few mins to heat through. Or pop it in a saucepan and simmer for 5-10 mins to allow the flavours to develop and blend. Add in as many drained cans of lentils as you want. Serve on wholegrain pasta 🍝 with optional Basil & Nutritional Yeast.
