Oil-free Mayonnaise my lovelies. The more you eat the better 😃. I started with this recipe that I googled (my search was oil-free vegan mayo) but modified it, as per usual. I didn't have silken tofu so used a pack of firm. Skipped the stevia & only put in approx 1/8th teaspoon of salt as I'm very salt-conscious. I didn't like it at first though so I added more lemon juice & quite a bit more apple cider vinegar & extra Dijon mustard. Just kept modifying and tasting until I was happy. Kids both really liked it. Matt tried some and said it was good but tasted more like Salad Cream - probably due to the extra vinegar (I did add a lot more) & the fact that I've always preferred salad cream!
