Plant-based eating can be super speedy & easy. Dinner tonight was Mexican black beans, homemade guacamole, steamed broccoli & brown rice. All really good for you, no nasties at all and it only took 24 mins to make (I had leftover rice from yesterday). Yep you read that correctly, only 24 minutes, start to finish! Kids declared it delicious. Read on for vague recipe.

Chop up a couple of purple onions*, half a red pepper, 2 garlic cloves. Sauté in saucepan (I use water not oil*) After a few mins stir in a tablespoon of Tomato purée Add whatever spices you fancy - I went for approx 3/4 teaspoon each of ground coriander, ground cumin, smoked paprika & a dash of cayenne pepper. And some grated fresh ginger. It's entirely adaptable though to whatever you have / like. Let it sauté a couple more mins then stir in approx 1/2 bottle of passata & add 2 cans of drained black beans (make sure both are no salt varieties) & some frozen sweet corn. Can add a dash of water or more passata if you like it runnier, we like a thick sauce. Leave that to simmer gently with a lid on while you steam the broccoli (chopped earlier - see other blog post today) & reheat brown rice in microwave. Meanwhile add 2 ripe avocados to a blender with approx 3-4 tomatoes, juice of a lime & a couple of tablespoons of frozen coriander. Give it a few pulses until it is roughly chopped / blended. Makes 3 enormous portions (these are big pasta bowls). I don't use salt but if you're not used to salt-free cooking you can add some seasoning to taste. Eh voila - quick, filling, very tasty & entirely healthy. (* I'll explain why I use purple onions and no oil in other blogs another time). If you haven't got leftover rice then put the rice on to boil first or you can even buy it ready cooked in sachets for the microwave - it does contain a little salt/oil but still preferable to white rice if you're in a rush.
