Here's what I did:
Sliced two aubergines thinly and roasted in the oven (without oil) for approx 15 mins until soft. Meanwhile I roughly chopped and steamed 2 large sweet potatoes (left skin on for extra nutrition) & then roughly mashed. Roughly chopped a red pepper, 2 carrots, 1 celery, 1 large red onion, 2 garlic cloves. Microwaved them for 5 mins then in blender with a jar of no-salt Passata, a heaped teaspoon each of cinnamon, oregano, onion powder, seaweed. Also a pinch of white pepper &
1/2 teaspoon of chipotle flakes. Drained 2 cans of beans (as we had lentils at the weekend in the Bolognaise) - I used Aduki & Pinto but it was a random choice. Layered up with sauce to start, then aubergines, sweet potato, sauce, beans & repeat until full. For the sauce I put approx a mug of Soy milk, Nutritional Yeast, nutmeg, mustard powder, onion powder, - dessert spoon of plain flour, in the blender and whizzed them up. Left it running until it thickened as I have a Vitamix, or you can make it in a saucepan stirring like usual. Plonked that on top and heated it all through in the oven. And voila!
