Banoffee Oat waffles today. We all know Oats are stupendously good for us, and I'm conscious that it's easy to eat loads of wheat (bread, pasta, wraps etc) so I swap in Oats where possible. Also these replace sugar with dates, add pecan nuts for good fats/taste/prevent sticking & plants only. These are entirely healthy with no nasties so feel free to double up and pig out. Vague recipe was: 1.5 cups of Oats, 1 teaspoon baking powder, 1/2-1 teaspoon vanilla essence, 2 cups any non-dairy milk, 2 pitted medjool dates (but any will do), approx 1/4 cup of pecan nuts. Bung it in blender and whizz up. It will thicken as it sits but adjust with more milk to waffle mix consistency. It doesn't need to be precise at all. I gave my non-stick waffle maker a very light brush of coconut oil for the first batch and it was fine after. Served with banana and butterscotch sauce leftover from the other day
