Easy speedy kids dinner today. I wasn't going to post it, as it is very simple, but the kids are saying how much they love it so I'd better had. Wholewheat pasta with Garlic Mushrooms & Courgette. Took 12 mins total! While the pasta was cooking I wiped and chopped the mushrooms (a 400 gram box), 1 fat courgette & 3 crushed garlic cloves. Sautéed it in a dry pan adding a splash of water if it started sticking. Personally I would have then mixed with the pasta but kids wanted it separate. Served with salad leaves on the side (extra iron, vitamins, calcium & antioxidants), a sprinkle of Nutritional Yeast (more bonus Vits & B12) & some frozen chopped Basil (all herbs are rich in antioxidants). Serves 2 hungry kids as the Husband and I are off out for cocktails & Thai dinner to celebrate our anniversary
