I wish you all could jump right into this photo and share my delicious salad, while sitting in the garden listening to the birds 😍.
Often people imagine that opting for a plant based diet is really restrictive or boring & I would have expected the same. But weirdly the opposite tends to be true. I don't really know why but I've seen enough other plant based eaters say the same. Perhaps it's because when you remove salt / meat / cheese / oil as flavourings you naturally get more creative with herbs / dressings / spices. I think that's why Vegan meals out in pubs etc (if you can even get them) are often disappointing as the meat-focused chef is a bit clueless on how to make the natural flavours of Veg sing.
Anyway I loosely based my salad today on Dreena Burton's summer chickpea salad (http://plantpoweredkitchen.com/summer-chickpea-salad/). I used 2/3s can of Cannellini beans, salad leaves, baby plum tomatoes, red pepper, 1/2 an avocado, some left over cold new potatoes & made the dressing from juice of a lemon, a teaspoon of mustard, half a teaspoon maple syrup & Basil leaves. And it is delicious
