Dreena Burton's Lentil Sniffle Soup today & a demonstration of how to simplify a recipe, and hence simplify life! Proper link to grown up recipe below but here's how I made life easy & a couple of modifications: 1. Didn't measure anything. Also added in lots of extra carrots as we had some to use up and we like carrots. Didn't peel them as mine are organic & lots of nutrition in the peels so just scrubbed with a veg brush. 2. Got the kids to chop the onions, carrots, celery & garlic while I had my morning shower 😃. Left them in a bowl in the fridge all day until I was ready to cook. Added bonuses - it makes you feel like a celebrity chef & apparently chores are very good for children! 3. I added extra curry powder (a no salt one) & also Garam Masala as we like more spice. Also added extra thyme & rosemary. And chopped coriander to serve. No need for any oil or salt & only used 1 teaspoon of low salt boullion. 4. Rather than the various stages of sautéing etc, I bunged everything apart from the Apple Cider Vinegar in my electric pressure cooking from the start (6 mins on high, 10 mins natural release). I've also previously made this in a slow cooker or on stove top. All work fine. 5. Couldn't find my Apple Cider Vinegar to stir in at the end so subbed in White Wine Vinegar. Then found out my son had put the bottle of ACV in the wine fridge when he unpacked the shopping 😂 (the downside of giving your kids chores!).
