Chop up 2 onions and a few garlic cloves and 1-2 stalks of celery.

Sauté in water for a few mins to soften.

Add low salt vegetable boullion - I always make it much weaker than the tub suggests to minimise salt

Let that boil for a few mins while you add your flavourings. For spinach soup I like mixed herbs, ground nutmeg, seaweed, onion powder, celery seeds, but all are optional.

Add the spinach and cook until just wilted - don't overcook or it will lose its colour.

Whizz it all up in a blender.

Taste and adjust flavourings & add Nutritional Yeast, whizz again.

Drizzle in some natural soya yoghurt.
