'Eat the Fridge' Thai Delights tonight turned out (surprisingly!) tasty. The more veg you eat, the more you like & they all go well together so it doesn't really matter what needs using up, just bung it all in. Here's your vague recipe but it's entirely adaptable to whatever veg you have. I made this in my electric pressure cooker but a saucepan will be fine: Vegetable choice - I used 1 butternut squash (peeled & chopped), 2 sticks celery, 3 red onions, a bunch of salad onions, a pack of green beans, a pack of mushrooms, 1.5 red pepper = empty fridge! I then added some frozen sweet corn, lots of frozen edamame beans. Approx 3-4 tablespoons of Ocado frozen Thai herb mix (or make your own mix of garlic, ginger, coriander, chilli, lemon grass). Added an extra tablespoon of chopped ginger & approx a teaspoon of dried chilli flakes. 1/2 teaspoon low salt bouillon powder. A teaspoon low salt Tamari or soy sauce. About 1-2 tablespoons of creamed coconut (go easy on this and your arteries will be grateful). Approx 1 cup of water - the veg released lots of liquid as it cooked & if you put more liquid in you need more seasoning. Chucked it all in my electric pressure cooker (set to manual for 3 mins. Natural release for approx 5 mins). Served with some Pearl Barley. And we ate all that veg between 3 of us. 10 portions of veg a day? Easy!
